Prep: 5 min. •  Cook: 10 min. •  Serves: 4-6


  • 1 bag Potato Inspirations™ potatoes (Recipe favorite: Honey Gold)
  • 1 tsp. salt
  • ¼ c. milk (use more if desired)
  • 1 ½ tbsp. pesto (use more if desired)
  • ¼ c. light sour cream
  • Salt and pepper, to taste


In medium saucepan on medium-high heat, combine salt, potatoes and enough water to cover the potatoes. Cover and bring to a boil. Reduce heat to medium and simmer 8-10 minutes, or until desired tenderness. Drain the potatoes.

Add the pesto, milk and sour cream. Use a potato masher to mash the potatoes until creamy. Add more milk if they seem dry. Taste and add more pesto if desired. Season with salt and pepper, to taste. Serve hot.
