Prep: 10 min. •  Cook: 15-20 min. (grill) or 20-25 min. (oven) •  Serves: 4-6


Ingredients:

For Potatoes

  • 24 oz. "1 bite" Potato Inspirations™ potatoes
  • 2 tbsp. olive oil
  • 1 tbsp. BBQ Seasoning or smoky seasoning of your choice
  • 2 cloves garlic, minced
  • 2 tsp. lemon juice

For Sauce

  • ½ c. light sour cream
  • 2 strips bacon, cooked and crumbled
  • 1 tsp. Worcestershire sauce
  • 2 tsp. dried chives
  • 1 tsp. hot sauce


Directions:


Preheat grill to medium heat or oven to 400-degrees. In a large bowl, mix olive oil, BBQ seasoning, garlic and lemon juice. Add potatoes and toss to coat. Place potatoes in a foil pouch and seal.


Grill method: Place potatoes on grill and cook for 7-10 minutes. Turn pouch over and continue cooking for 7-10 minutes, or until potatoes are tender.


Oven method: Place potatoes in pre-heated oven and bake for 20 to 25 minutes, or until potatoes are tender.


While potatoes are cooking, combine sauce ingredients in a large bowl. When potatoes are done, add hot potatoes to bowl with sauce and toss to coat. Serve hot.
