Prep: 10 minutes •  Cook: 25 minutes •  Serves: 4


  • 16 oz. Potato Inspirations™ fingerling potatoes
  • 1 lb. of asparagus, trimmed and diced in 2-inch sections
  • 2 tbsp. olive oil
  • Salt and pepper, to taste


Preheat the oven to 400-degrees.

Cook the potatoes for 12 minutes in a large pot of boiling water. Drain the potatoes, cool slightly, and then slice lengthwise.

Add potatoes and asparagus to a baking sheet, Toss potatoes and asparagus with olive oil and season with salt and pepper. Place on a baking sheet and roast in the oven for 10 minutes, until asparagus is tender.
