  • 24-28 oz. Potato Inspirations potatoes
  • 1 tsp. salt
  • 2 tbsp. butter
  • ⅓ c. bleu cheese crumbles
  • 2 tbsp. bacon bits
  • 1 tbsp. finely chopped fresh chives (or 1.5 tsp. dried chives), optional
  • Salt and pepper, to taste



Add salt, potatoes and enough water to cover the potatoes to a medium saucepan and cook on medium-high heat. Cover and bring to a boil. Reduce heat to medium-low and simmer 10-15 minutes or until desired tenderness.

When potatoes are done cooking, drain and add butter, bleu cheese, bacon bits and chives. Stir to combine. Season with salt and pepper, to taste. Serve hot.
