- 24 oz. Potato Inspirations® potatoes
- ⅓ c. pesto
- ½ lemon, zested and juiced
- Shredded Parmesan cheese
- Additional pesto or ranch, optional for dipping

Preheat oven to 400-degrees. On a baking sheet combine the potatoes and pesto; toss to coat. Roast in oven for 20 minutes, stirring halfway through, until tender. Remove from oven, toss with lemon zest, juice and Parmesan cheese. Serve with additional pesto or ranch for dipping, if desired. -
