- 9 Potato Inspirations® fingerling potatoes, halved
- 2 tsp. olive oil, divided
- Salt and pepper, to taste
- 4 ½ tsp. sour cream
Optional Toppings

Preheat oven to 450-degrees.
Toss potatoes with olive oil, salt & pepper.
Arrange potatoes on a cookie sheet, cut side up. Roast until fork tender, about 15 minutes.
