Irish Potato Bread

- 1½ c. prepared mashed potatoes leftovers work great!
- 2 large eggs
- ⅓ c. whole milk
- ½ c. grated Irish cheddar
- ½ tsp. garlic powder
- 3¼ c. all purpose flour
- 1½ tbsp. baking powder
- 1 tsp. sea salt
In a large bowl, combine mashed potatoes, eggs, oil, milk, cheese and garlic powder.
In separate bowl combine flour, baking powder and salt.
Combine wet and dry ingredients until dough is formed. Lightly flour the countertop and gently knead the dough.
Gather the dough into a smooth ball and it into a lightly oiled cast-iron skillet.
With a sharp knife cut a line down top of the dough. Place dough into oven and bake for 45-55 minutes.
Remove bread from oven and allow to cool for 10 minutes on a wire rack.
Serve with butter, fruit preserves or honey.
