24 oz.Potato Inspirations® Potatoes
¾c.fresh asparagus spears
1red bell pepper, trimmed, deseeded and quartered
1tbsp.olive oil
½c. shredded carrots
½c.Italian dressing
1tbsp.asiago cheese
Instructions
Preheat grill to medium-high heat. Microwave potatoes for 7 minutes. Cool and set aside.
Toss asparagus and red bell pepper in olive oil, then grill until cooked and tender, about 5 minutes. Cool. Slice asparagus on the bias thinly. Julienne red bell pepper and set aside.
Toss vegetables in dressing and chill. Top with Asiago cheese and serve.
