Ingredients

  • 24 oz. Potato Inspirations® Potatoes
  • ¾ c. fresh asparagus spears
  • 1 red bell pepper, trimmed, deseeded and quartered
  • 1 tbsp. olive oil
  • ½ c. shredded carrots
  • ½ c. Italian dressing
  • 1 tbsp. asiago cheese

Instructions

  • Preheat grill to medium-high heat. Microwave potatoes for 7 minutes. Cool and set aside.
  • Toss asparagus and red bell pepper in olive oil, then grill until cooked and tender, about 5 minutes. Cool. Slice asparagus on the bias thinly. Julienne red bell pepper and set aside.
  • Toss vegetables in dressing and chill. Top with Asiago cheese and serve.
