Add olive oil to a large sauté pan and heat over medium-high heat. Spread the potato slices over the bottom of the pan. Cook for 5-8 minutes. Turn over potatoes and add garlic. Continue cooking 5-8 minutes, or until potatoes are golden brown. Add rosemary and season with salt and pepper. Serve hot.
Feel free to substitute 1 teaspoon dried rosemary for the fresh rosemary if you prefer.
