  • 24-28 oz. Potato Inspirations™ potatoes
  • 12 boneless, skinless chicken thighs
  • 1 can (14.5 oz.) diced tomatoes
  • 1 c. shredded Parmesan cheese
  • ½ c. Italian dressing
  • 2 tsp. Italian seasoning


Place chicken thighs in bottom of slow cooker. Add the potatoes on top of the chicken and set aside. In medium bowl, combine tomatoes, dressing and Italian seasonings. Pour mixture over chicken and potatoes. Sprinkle with Parmesan cheese. Cover and cook on LOW for 7 hours or on HIGH for 4 hours.
